Fix BackendInfo() race (#18305) 
`GetParityForSC` has a value receiver, so Config is copied before the lock is obtained.

Make it pointer receiver.

allow support for parity '0', '1' enabling support for 2,3 drive setups (#15171) 
allows for further granular setups

- 2 drives (1 parity, 1 data)
- 3 drives (1 parity, 2 data)

Bonus: allows '0' parity as well.

fix: incorrect O_DIRECT behavior for reads (#12811)
